So delicious! And great source of Protein! I also use a side of Green beans with caramelized onions and almonds on the side!
Ingredients
5 small chicken breasts
Maranade of choice (I like sun dried tomato garlic and basil)
9oz Fresh spinach
1 tbls coconut oil
Sea salt and pepper to taste
1 cup Raw shredded pepper-jack cheese (you can also use Mozzarella instead)
Directions
Marinate the chicken for 30 or more minuets in the fridge.
Over medium high heat coat the pan with coconut oil, then add Spinach toss to coat with the oil.
Season with salt and pepper to taste.
Once spinach has wilted down remove from heat to a separate mixing bowl. Allow to cool.
Take the chicken breasts and cut a pocket on the thickest side on each one.
Add shredded Cheese to the mixing bowl with the spinach and stir.
Use a spoon to scoop the mixture and stuff into each pocket of your chicken breasts.
Place on George forman grill and cook till done. about 5-7 min.
This is a super easy recipe and so full of flavor!
P.S. I do make my own marinade. I throw a few small tomatoes, basil and garlic in a blender with a little bit of balsamic vinegar and a little olive oil after blending, put in a big ziplock bag add chicken and let sit in the fridge.
